Dual Boiler Technology
The primary function of an espresso machine is to brew coffee using pressurised water and also to produce steam for texturing and heating milk. The machine must be capable of thermal stability at the point of extraction, as fluctuations in water temperature and pressure will have a detrimental effect on espresso flavour.
In 1939 La Marzocco developed and patented their unique dual boiler technology. Every machine has one boiler tank and one brew tank. The boiler is dedicated to steaming milk and the brew tank is dedicated to coffee extraction. This allows the tanks to operate simultaneously yet independently of one another.
A typical New Zealand espresso bar uses the milk steaming function up to 500% more than their Italian counterparts. So high steaming demands can upset temperature stability of a single boiler machine and can lead to bitter or scorched espresso. With La Marzocco dual boiler technology the brewing water and entire group head system holds a large mass of perfect temperature water, controlled by a precise thermostat, resulting in much more stable brewing temperatures. The dedicated steam boiler provides greater milk steaming power plus superior texture as the steam is hotter and dryer.
